Roniece Weaver, MS, RD, LD

Founding Partner, Executive Director

Roniece is a founding partner and Executive Director of the Hebni Nutrition Consultants, Inc. (the developer of the original Soul Food Pyramid- a culturally sensitive food guide pyramid. She is the co-host of the very popular cooking show Health and Fitness Now, currently shown on Vision Network and PBS in Orlando Florida. In her current role she is also the co-author with Fabiola Gaines on several wellness books. “The New Soul Food Cookbook for People With Diabetes”, “Slim Down Sister”, “Month of Meals,” Family Style Soul Food, Healthy Soul Food, and their newest book to be released in 2011 with the American Cancer Society.

She and her partner, Fabiola Gaines are responsible for nutritional analysis, taste testing, and promotion of both books. In addition, she provides educational seminars to many health care organizations across the country. Mrs. Weaver was awarded her B.S. in Food Science/Human Nutrition from the University of Florida, Gainesville, Florida. She continued her studies at the University of Saint Francis where she received her Master of Science in Health Care Administration.
 

Fabiola Gaines, RD, LD

Founding Partner, President

Fabiola is one of the founding partners of Hebni Nutrition Consultants, Inc. and serves as Program Manager. For several years she served as Co-Chair of the Cultural Diversity Committee for the Central Florida American Diabetes Association in Orlando, Florida. Ms. Gaines also serves as Chief Clinical Dietitian for Depugh Nursing Home in Winter Park Florida.

Ms. Gaines received her B.S. in Foods and Nutrition from Florida A & M University, and is a certified member of the American Dietetic Association. Florida A & M University gave her a prestigious honor of being placed on the Wall of Fame at the University and honoredher as a distinguished graduate of the University. She has also received numerous honors such as Women of Distinction for the Citrus Council of Girl Scout, Inc. and Speaking of Women’s Health. She is currently the national president of the National Organization of Blacks in Dietetics and Nutrition (NOBIDAN).
 

Ellareetha Carson, RD, LD

Founding Partner, Secretary

Ellareetha T. Carson, RD. LD. is one of the founding partners of Hebni Nutrition Consultants (HNC), Inc. Ms. Carson retired from the Florida Department of Health in July 2002 where she was a Senior Public Nutritionist with the Orange County Health Department Orlando, FL. She provided nutrition education counseling for the Women’s Infants and Children (WIC) Program Participants and others clients.

Ms. Carson is a graduate of Florida A & M University with a B. S. in Foods, Nutrition and Institutional Management. She completed her dietetic internship at Freedmen’s Hospital (Howard University Medical Center) in Washington, D.C. and received membership in The American Dietetic Association (ADA). Ms. Carson also became a fifty year member of ADA in 2007.
