Marinated Black Bean Salad

Makes 6 servings

Ingredients

4 Tbsp or 2 oz Lime Juice

2 Tsp Fresh Parsley, Fine Diced

1/2 Tsp Ground Cumin

1Tsp or 1/4 oz Fresh Garlic Cloves

2 Tbs or 1/3 oz Mexican Seasoning Mix

1/2 cup or 1/3 oz Fresh Cilantro, Minced

1 Tbp or 1/4 oz Olive Oil

1/8 cup or 2 oz Honey

1/4 cup or 2 oz Red Wine Vinegar

2 cup or 11 1/2 oz Canned Low-Sodium Black Beans, drained and rinsed

1 1/2 cup or 8 2/3 oz Froze Whole-Kernel Corn, thawed

1 cup tri-color Bell Peppers diced (red, yellow, green)

1/2 cup Fresh Salsa

1/4 cup Fresh Red Onions, diced

1/4 cup Jalapeños, diced, seeded

Directions

  1. Dressing: Combine lime juice, parsley, cumin, garlic, ancho chili powder or Mexican seasoning mix, cilantro, olive oil, honey, and apple cider vinegar. Stir well. Set aside for step 3.
  2. Vegetables: Combine black beans, corn, green peppers, red peppers, salsa, onions, and jalapeños in a large bowl. Stir well.
  3. Pour about 1/2 cup dressing over vegetables. Stir well.
  4. Transfer about bean salad to medium serving bowl.
  5. Critical Control Point: Cool to 40 °F or lower within 4 hours.
  6. Critical Control Point: Hold at 40 °F or below until served,
  7. Serve 2/3 cup.

Turkey Burger

INGREDIENTS

2 lb. ground turkey

1 large egg, beaten

2 cloves garlic, minced

2 tbsp. Worcestershire sauce

4 tbsp. freshly chopped parsley

½ tsp Kosher salt

1 tsp Freshly ground black pepper

1 tbsp. extra-virgin olive oil

½ cup chopped fresh spinach

½ cup chopped onions

¼ cup green or red bell peppers

DIRECTIONS

  1. In a large bowl, mix together turkey, egg, garlic, Worcestershire sauce, and parsley, then season with salt and pepper.  
  2. In a medium skillet over medium heat, heat oil sauté onions, spinach, and bell peppers. Add to ground turkey and mix.  Shape into meat loaf using water to smooth out the meat loaf for better consistency while cooking.  Cook until well done 165 degrees.  Serve  hot

Garlic Cilantro Brown Rice

Ingredients

2 cups of water

6 cloves of garlic, minced

2 tsps of salt

2 bay leaves

1 tablespoon  olive oil or other oil

zest of 1/2 a lime juice from 2-4 limes

1 bunch of cilantro 

4 green onions

Instructions

Bring water to a boil with garlic, salt, bay leaves, oil, and lime zest.

When water starts boiling, add the rice, stir it and close with the lid.

Start a timer for 45 minutes.

Halfway through cooking, water will have mostly evaporated, open lid, and give the rice a quick stir and close back up until cooking is complete.

Once the timer goes off, add the remainder of ingredients; lime juice, green onions, and cilantro.

Mix all ingredients in and enjoy!
